BASIL Basil
has a sweet, strong spicy clove-like flavour.
It is particularly good with tomatoes, in stir-fries and fish dishes.
Used as a garnish for vegetables, chicken and egg dishes.
BASIL HINTS

Add finely chopped basil to scrambled egg or an egg
salad, sprinkle over a poached egg or coat poultry, meat
and vegetables. |

Try adding coarsley chopped basil leaves to cooking
water for green beans or and any other green vegetable. |
• |
Blend in a processor a combination of garlic, basil
leaves and vegetables stock and baste lamb, fish or chicken
during roasting. |

Basil goes really well with tomatoes...

Add finely chopped basil to tomato soup just prior
to serving. |

Add coarsley chopped leaves to tomato sauces for pasta
or pizza and simmer for the last 15 minutes of cooking. |

For a delicious drink with a difference warm tomato
juice and add finely chopped basil leaves. Chill the drink
and serve. |

Cut tops off large tomatoes and bake in the oven for
about 15 minutes. Top with finely chopped basil leaves,
grated cheese and freshly ground black pepper. |
