CORIANDER
Coriander has a distinctive, sharp, crispy aroma
and a spicy flavour. It enhances salads, eggs, dressings, meat and
fish dishes, stir-fries, curries and sauces.
CORIANDER HINTS

Add chopped coriander to the water for cooking rice
5 minutes before completion. |

Add chopped coriander to salsa and tomato sauce blends. |

Chop coriander and toss with dressing for green and
avocado salads. Great sprinkled on as a decorative garnish. |

Brush fish fillets with butter and sprinkle with finely
chopped coriander before baking. |

Mix finely chopped coriander with softened butter,
roll in plastic wrap and chill, slice as medallions and
put on steaks or chicken just prior to serving. |

Add chopped coriander, oregano, basil and thyme to
a balsamic vinaigrette. |

Steep whole coriander in a bottle of red wine vinegar
and store in a dark place for 1-2 months to extract the
herb flavour. Strain and use in sauces and dressings. |
