  CORIANDER
Coriander has a distinctive, sharp, crispy aroma and a spicy flavour. It enhances salads, eggs, dressings, meat and fish dishes, stir-fries, curries and sauces.


CORIANDER HINTS

Add chopped coriander to the water for cooking rice 5 minutes before completion.
Add chopped coriander to salsa and tomato sauce blends.
Chop coriander and toss with dressing for green and avocado salads. Great sprinkled on as a decorative garnish.
Brush fish fillets with butter and sprinkle with finely chopped coriander before baking.
Mix finely chopped coriander with softened butter, roll in plastic wrap and chill, slice as medallions and put on steaks or chicken just prior to serving.
Add chopped coriander, oregano, basil and thyme to a balsamic vinaigrette.
Steep whole coriander in a bottle of red wine vinegar and store in a dark place for 1-2 months to extract the herb flavour. Strain and use in sauces and dressings.
