carrots with lemon and CORIANDER
sauce
This sauce is wonderful with other vegetables
too. Try it with courgettes.
3 medium carrots (400g), peeled and cut into rings
1 Tbsp brown sugar
1 Tbsp butter
1 tsp grated lemon rind
2 Tbsp lemon juice
freshly ground black pepper
2 Tbsp finely chopped fresh coriander
Place the carrot pieces, brown sugar, butter, rind, juice and pepper
in a microwave proof dish. Mix, cover and cook on high power for 4
- 6 minutes or until tender, stir once during cooking. Mix the coriander
through the carrots.
Serves 4. |
