MEDITERRANEAN MASH

Comfort food at its best - mashed potatoes reign supreme in terms of taste,
texture and just making all meals better! This particular mash is no exception!


4 large floury potatoes (900g)
1/4 - 1/2 cup milk
2 Tbsp olive oil
1/2 cup caper berries or olives
1/4 cup sliced sun-dried tomatoes
1/4 cup marinated feta cheese
1/4 cup finely chopped fresh parsley or chives
freshly ground black pepper

Peel the potatoes and cut into even sized pieces. Boil for 25-35 minutes or until soft. Drain. Mash in the milk and oil, adding extra milk if necessary to make the potatoes smooth and creamy. Mix in the caper berries, sun-dried tomatoes, feta and herbs. Season with pepper.
