4-6 tomatoes, sliced 1-2 red onions, finely sliced into rings 1 cup fresh basil leaves, lightly torn if the leaves are large 1/4 cup spiced vinegar 2 Tbsp oil 1 tsp sugar freshly ground black pepper
Layer the tomatoes, onion and basil on a serving platter. Place the vinegar, oil and sugar in a screw top jar, shake until the sugar dissolves. Pour over the salad. Season generously with the pepper.
